Pumkin Soup

1 kg butternut pumpkin
4 carrots
1 brown onion
4 cups of stock (I use chicken)
1 tablespoon curry powder
1 tablespoon dried mixed herbs

Peel and chunk veggies and place in saucepan with all other ingredients.

Boil for around 45mins or until all veggies are soft.

Blend with a stick mixer.

Note: This is a thick mixture (the way I like it!) but simply add a little water if you like it thinner.

Serve with a dollop or cream and warm bread if desired.
